Gluten is a protein found in wheat , rye barley , triticale, millet, and to a lesser extent Oats . Wheat and corn are found in many cereals , breads, spaghetti, noodles , pizza , burgers, biscuits and cakes. Its found in many processed foods as well . It is very important to read the labels to determine if the food contains gluten Breakfast cereals , Bread, Dried Herbs many dried herbs are bound in wheat to help dry them properly for packaging. Its always best to eats fresh herbs if possible Pasta and noodles made from wheat, white flour . Alternative pasta that is gluten free can be found made by Buckwheat, rice flour, quinoa, or amaranth Biscuits and crackers Sausages – many contain gluten so its important to read the label and check for “Malto dextrin “, gluten , soy and maize if you are sensitive Candy- Look out for hard candy as it may have Malto dextrin or sugars which are wheat based Potatoe chips or French fries- Its important to look at the box/bag as many chips are reconstituted potato dipped in wheat. Many of the flavorings of potato chips also contain maltodextin from a wheat source. Other Foods- Many processed meats and sausages contain wheat or gluten read the label. Any canned sauces need to be inspected clearly for ingredients which contain wheat . Look for Lecithen. Lecithin can be wheat based Soy sauce – did you know soy sauce has wheat in it? Yes it does, so when eating out ask if they have gluten free soy sauce or else don’t eat it. Read the label as many soy milks have wheat based sweetener or Malto dextrin from wheat derivative Also many soy products or Worcestershire sauces often use a thickener or emulsifier in dressings meats and candies which is called lecithin. Lecithen can be wheat based Sometimes thickened with Also many Sushi restaurants use a mix to prepare their rice which contain Gluten. Ask to see the mix/box to verify if possible. I found this out the hard way.
