It is also seen more frequently from people moving from native foods to western diets which have had an increasing amount of gluten based products and processed foods Coeliac disease has been estimated at up to 1 in 500 in many countries and usually Gluten Alergies presents itself with enteropathy or problems in the intestine. Doctors believe the rising cause of Gluten Alergies is the increased use of gluten in other areas other than the more obvious production of grain based products. GLutne is used as an emulsifier and is added to many food products and depending on the labeling laws of the country may or may not be identified based on the amount it contains. As countries develop regulations on ingredients and labeling we may see this improve. In addition to Gluten Alergies may present themselves differently for many people and there is no major consensus on how it presents itself clinically.
